TÍA IRENE'S EGG NOG

6 Eggs, separated whites from yolks
1 Tbsp. of grated Lemon rind
1 Quart of cold Milk
1/8 Tsp. Salt
½ Tsp. Lemon Extract
1 Tsp. Vanilla
1 Pint Whipping Cream
½ Cup Sugar

Beat egg yolks, milk and sugar, until thick and light in color. Add lemon extract, vanilla, and salt. In another bowl, mix whipping cream, with a mixer until thick. Stir that in to the first bowl. Beat egg whites. Add the lemon rind & egg whites to mixture. Served cold. Garnish with cinnamon or nutmeg.

Makes 20 cups

* Add several shots of rum, if desired.
