Banana Nut Muffins

2 sticks unsalted butter, softened
2 c. sugar
4 eggs, beaten
6-7 bananas, mashed
2 ½ c. flour
1 t. salt
2 t. baking soda
½ c. chopped walnuts

Preheat oven to 350 degrees. Grease 24 muffin tins or use cupcake liners. Cream butter and sugar together. Gradually add well beaten eggs and mashed bananas. In a separate mixing bowl, sift together flour, salt and baking soda. Add flour to banana mixture. DO NOT OVERMIX. Gently stir in nuts. Spoon mixture into prepared muffin tins and bake for 15-20 minutes. Makes 2 dozen muffins.
