Cream Cheese Muffins

3 c. flour
¾ c. sugar
4 t. baking powder
1 (8-oz.) package cream cheese, softened
2 eggs
1 c. milk
1 t. vanilla extract
½ c. butter, melted and cooled
Coarse sprinkling sugar for topping

Preheat oven to 400 degrees. Grease a large muffin tray. Sift dry ingredients and combine. In a blender combine the cream cheese and eggs, blend until smooth. Add milk, vanilla and melted butter and continue to work the batter until completely mixed and smooth. Pour liquid ingredients into the bowl of dry ingredients and mix with a wooden spoon until they are combined. DO NOT OVERMIX.

Spoon batter into muffin cups piling batter up to the top. Sprinkle sugar on top of each one. Bake 25-30 minutes. Makes 2 dozen muffins.
