Kolache

1 C mashed potatoes
½ C potato water
2 eggs (beaten)
½ C butter (melted)
½ C sugar
2 C milk
2 packages dry yeast
¼ C warm water
6 C flour
Bake at 350 degrees.
Put yeast in water to dissolve. In large mixing bowl mix all the ingredients except the flour. Add the yeast when dissolved. Add the flour, about 2 cups at a time. When you can’t mix it anymore with a spoon, dump it out on the counter and knead until you use up all the flour. Knead until it doesn’t stick to your fingers. You may have to add a little more flour. Cover and let raise to double the bulk. Then make little balls and arrange on cookie sheets. Let rise about ½ to ¾ hour. Punch down the center and fill with cooked and thickened fruit, such as cherry, apricot, poppy seed, prune, or cottage cheese.
Cottage Cheese Filling
1 Pint cottage cheese (creamed, small curd)
2 egg yolks (beaten)
1 tsp lemon rind
3 T sugar
1/8 tsp salt
1 C golden raisins (optional)
3 T flour
Beat eggs. Add sugar, flour and raisins. Add cottage cheese. Mix well. Add lemon rind and salt. Fill kolaches.
