Oatmeal Raisin Cookies

1 c. butter, softened
1 c. firmly packed brown sugar
1/2 c. granulated sugar
2 eggs
1 t. vanilla
1 1/2 c. all-purpose flour
1 t. baking soda
1 t. cinnamon
3 c. uncooked Quaker Oaks
1/2 t. salt
1 c. raisins
1 c. chopped walnuts (optional)

Preheat oven to 350 F. Beat together butter and sugars until creamy. Add eggs and vanilla and beat well. Combine flour, baking soda, cinnamon and salt and mix well. Add to the egg and sugar mixture and blend together thoroughly. Add oats and raisins and mix well. Drop by rounded tablespoonfuls onto ungreased cookie sheet. Bake 10-12 minutes or until golden brown. Cool for one minute on cookie sheet and remove to wire rack to completely cool.

Makes approximately 4 dozen cookies.
