Peanut Butter Cookies

1/2 c. butter, softened
1 c. creamy peanut butter
1/2 c. firmly packed brown sugar
1/2 c. sugar
1 large egg
1 t. vanilla extract
1 1/2 c. all-purpose flour
1/2 t. baking soda

Beat butter and peanut butter in a large mixing bowl at medium speed of an electric mixer until creamy, gradually add sugar, beating well. Add egg and vanilla, beating well. Combine flour and soda; gradually add to butter mixture, beating until blended. Cover and chill at least 2 hours. Shape dough into 1-inch ball and with the tines of a fork dipped in flour, press horizontally and vertically into the dough balls. Bake at 350 F. for 9 minutes. Cool on a wire rack.

Makes 4 dozen cookies.
