BarBQ'd Beef Brisket

One 4 to 5 lbs. boneless beef brisket
1 medium onion, quartered
1 crushed garlic clove
1 bay leaf
2 cups ketchup
1/4 cup lemon juice
1/4 cup Worcestershire
2 tablespoons sugar
1 tablespoon salt
2 tablespoons liquid smoke
2 teaspoons celery seed
1 teaspoon chili powder

Place brisket, onion, garlic and bay leaf in covered kettle with just enough water to cover and bring to a boil. Reduce heat and simmer 2 1/2 hours until tender. Preheat oven to 325 degrees. In medium saucepan combine ketchup, 1 cup water and remaining ingredients, bring to a boil. Drain meat, place in foil lined shallow baking pan. Brush meat with ketchup mixture. Bake 45 minutes, basting occasionally. Heat remaining ketchup mixture over medium heat and serve with meat. Serves 10 - 12.
