Pan Seared Salmon

2 T. Extra Virgin Olive Oil (the good stuff)
4 salmon filets, pin bones and skin removed
Salt & Pepper to taste
Preheat oven to 375 degrees F. Coat a large skillet with the olive oil and place over medium heat. When the pan is very hot, add the filets to the pan, season with salt and pepper. Cook for 2-3 minutes until it is nicely brown and crusty. Turn the fish over and cook for another 2-3 minutes on the other side. Place entire pan in oven to finish cooking. Do not overcook the fish - it will be dry. If you pan has a plastic handle you can wrap it in foil and still put the pan in the oven.
