Szechwan Sausage Wraps

1 pound sausage
2-3 teaspoons Szechwan seasoning
1 can (8-ounce) sliced water chestnuts, drained and chopped
1 cup shredded carrots
½ cup sliced green onions
½ cup toasted walnuts
1 cup bean sprouts
3 tablespoons light soy sauce
1 head iceberg or bibb lettuce, leaves separated, rinsed and drained

In large skillet, cook sausage with Szechwan seasoning until well browned, stirring to break meat into small pieces.

Add water chestnuts, carrots, green onions, walnuts, bean sprouts and soy sauce. Cook and stir 2-3 minutes or until heated through.

To eat, spoon some sausage mixture into center of a lettuce leaf, fold up and tuck in the edges (like a fajita).
