Jicama Salad

1 medium jicama, peeled and cut into strips
1 medium red onion, sliced into rings
1 cucumber sliced thin
3 large seedless oranges, cut into sections
1/3 cup lemon juice
1/4 cup olive oil
1 minced garlic clove

In a salad bowl toss together the jicama strips, onion, cucumber and orange slices. Mix lemon juice, olive oil and garlic in a small container with a lid. Shake well. Drizzle over salad. Optional: add crushed, dried red pepper flakes to taste. Serves 6.
