Bonnie's Potato Salad

THE FOLLOWING IS MY POTATO SALAD RECIPE. ADJUST TO INDIVIDUAL TASTE
IF DESIRED.
POTATO SALAD
4 OR 5 IDAHO OR RUSSET POTATOES (BOILED JUST TIL DONE,PEELED AND CUBED)
4 HARD BOILED EGGS CHOPPED
1 SMALL CAN SLICED BLACK OLIVES (DRAINED)
1 BUNCH SCALLIONS OR GREEN ONIONS CHOPPED
4 DILL PICKLE SPEARS DICED OR YOU CAN USE DILL RELISH ABOUT 1/2 THE
BOTTLE
4 CELERY STALKS CHOPPED
2 OR 3 ROASTED RED PEPPERS DICED (THIS GIVES IT THE GREAT FLAVOR)
PIMIENTOS ARE JUST TOO BLAND
PICKLE JUICE (GO SLOWLY ON THIS AND KEEP TASTING )
1/4 CUP REGULAR OR DIJON MUSTARD OR MORE TO TASTE
3/4 CUP MAYO OR SALAD DRESSING OR TO TASTE
1/2 TEASPOON CELERY SALT
SALT AND PEPPER TO TASTE
COMBINE ALL INGREDIENTS AND MIX WITH SPICES AND CONDIMENTS AND
ENJOY!!! IT GETS BETTER THE EARLIER YOU MAKE IT AND LET IT COOL IN
REFRIGERATOR.
